One of our signature starters: 揚げ出し豆腐 Agedashi Tofu ⬜️🔥

•“Agedashi” means “fried and submerged” – The word “agedashi” comes from the Japanese words age (fried) and dashi (a flavorful stock). The tofu is deep-fried until crispy on the outside, then served in a warm dashi broth 🍲.

•The dashi broth is key🍲 – Agedashi tofu is usually served in a dashi-based broth made from kombu (seaweed) and bonito flakes (dried fish). The broth is subtly flavored with soy sauce and mirin, giving the dish its umami richness.

•Agedashi tofu is often served in Japanese pubs (izakayas) as a small, savory dish to accompany drinks! Be sure to try it with a nice bottle of sake 🍶🍶🍶

•The practice of deep-frying tofu is actually relatively modern in Japan, emerging during the Edo period 17th century.

• Agedashi tofu isn’t just a dish for restaurants. During Japanese festivals (matsuri), street vendors often serve deep-fried tofu dishes, with Agedashi tofu being a popular option for festival-goers looking for a hot, crispy snack.🍡🎏🎋🎑
